Christmas Turkey with 40 cloves of garlic

Prepare at least 3 bulbs worth of garlic cloves by bashing the whole bulb to split it and release the skins. Then put the peeled garlic in boiling water for 2 minutes, then drain in a colander.

Follow your usual recipe for roasting your turkey. When the turkey is about 1 hour from being fully cooked, scatter the garlic cloves around the pan. Continue to baste the turkey as normal and make sure there are plenty of juices in the pan so the garlic doesn't burn.

Once the turkey is cooked, the garlic will have softened to the extent that you can make a lovely pan gravy with sweet roasted garlic undertones.

Wrap garlic cloves in thin slices of streaky bacon. One slice of bacon can do 2-3 cloves so it's not wrapped round too many times.

Roast in a hot oven for 20-25 minutes.

Super garlic sprouts

Shred your sprouts by cutting them finely. Saute for 3 minutes over a medium heat in butter and crushed garlic, taking care not to burn the garlic. Top with crispy pancetta if you wish.
