Garlic scape pesto

Garlic scapes, the flowering stem of a hard neck garlic, are available in abundance from about mid June (if you happen to live near a garlic farm or you grow your own). They are completely delicious and work brilliantly as a fiery garlic pesto.



  • 400g Scapes cut into pieces
  • 100g grated parmesan
  • 250ml Extra virgin Olive oil
  • 1 tablespoon Lemon Juice
  • Salt & black pepper to taste



  1. Throw all ingredients in a blender until smooth. Add more olive oil if required and season to taste. Stir through pasta, use to top roasted meats or add to sandwiches.
