Autumn’s best flavours shine in this warm, colourful salad, where roasted squash, chickpeas, charred apples, creamy feta and tangy pickled onions come together in a bowl that feels just perfect for the season. Ingredients

  • 2 cloves organic garlic, crushed
  • 2–3 tbsp Organic Garlic Honey & Mustard Dressing (+ extra to drizzle)
  • 1 tbsp olive oil
  • Pinch Sea Salt with Organic Garlic
  • 1 medium squash, cut into wedges or cubes
  • 400g chickpeas, drained
  • 1 apple - thinly sliced
  • Drizzle of balsamic vinegar
  • 150g mixed green leaves
  • Small handful pickled red onions
  • 100g feta, crumbled

 

Instructions

1) Heat oven to 200°C.

2) Mix together the crushed garlic, Garlic Honey & Mustard Dressing, olive oil, Sea Salt with Organic Garlic & Pepper, drizzle over the squash and toss to combine.

3) Spread onto a large oven dish and roast for 20 minutes until golden and tender. Add the chickpeas to the dish, toss to combine and roast for a further 15 minutes.

4) Whilst the squash and chickpeas are roasting, heat a griddle pan and fry the apple slices over a gentle heat with a drizzle of oil and balsamic vinegar.

5) Add green leaves to a bowl or platter and top with roasted squash and chickpeas, pickled onions, and charred apples.

6) Crumble feta over the top followed by an extra drizzle of Garlic Honey & Mustard Dressing.

 

Tips:

  • The charred apples bring a pop of sweetness that balances the savoury garlic and feta beautifully. Try swapping for other fruits like figs or blackberries, or switch the feta for goat’s cheese - it’s a very versatile salad that’s great to experiment with.
  • Toasted nuts are lovely for an extra crunch.
  • Protein-packed chickpeas and hearty squash make this a filling, satisfying dish that’s ideal for lunch or a lighter dinner. If you want to make it more of a main meal, try adding your choice of protein (grilled chicken works well) or bring in other seasonal veggies.
